This is one of those very CBF recipes where most of the work is basically just blending everything together.

The chicken gets gently poached and shredded, then tossed through a creamy pumpkin seed pesto made with basil, pepitas, parmesan or pecorino, avocado and Greek yoghurt.

From there, you can turn it into whatever meal you have the energy for. Scoop it onto toast, add it to a cucumber bowl, throw it in a wrap or honestly just eat it straight from the fridge.

How does this recipe support the nervous system?

The chicken gives you quality protein along with B vitamins, including B6, which contributes to normal nervous-system function and energy metabolism.

Pumpkin seeds are a great source of magnesium and zinc, while also bringing healthy fats and some protein. Magnesium is involved in normal nerve and muscle function and energy metabolism.

The avocado adds potassium, magnesium, fibre and monounsaturated fats, while the Greek yoghurt and parmesan contribute extra protein and calcium.

And maybe just as importantly, it’s a meal you can prep once and eat a few different ways. When your brain already feels full, having something nourishing sitting in the fridge ready to scoop onto toast or throw into a bowl can make feeding yourself a whole lot easier.
