Pumpkin
Pumpkin gets its beautiful orange colour from beta-carotene, which the body can convert into vitamin A. Vitamin A plays an important role in normal immune function and helps maintain healthy mucosal barriers, including those lining the respiratory and digestive tracts. Pumpkin also provides vitamin C, fibre and a variety of antioxidant carotenoids, making it a beautiful whole-food base for the sauce.
Onion
Onion provides flavonoids including quercetin, one of our favourite plant compounds for this month. Quercetin has been studied for its antioxidant and anti-inflammatory properties as well as its interactions with mast cells and histamine release.
Garlic
Fresh garlic contains organosulfur compounds, including compounds formed from allicin, that have been studied for their antioxidant, antimicrobial and immune-supportive properties.
Fresh Sage
Sage brings more than flavour to this recipe. It’s rich in aromatic plant compounds and polyphenols with antioxidant activity, helping support the body’s natural defences against oxidative stress.
Turkey & Egg
Turkey and egg provide quality complete protein alongside micronutrients involved in normal immune function. Turkey is particularly useful for nutrients including selenium and B vitamins, while egg provides choline, selenium and vitamin A.
