HOLISTHUB: Giant Walnut Crumbed Chicken Schnitzel

This is a big, golden, crunchy schnitzel situation, but made a little more brain-supportive with a walnut, sesame, almond flour and parmesan crumb.

Instead of the classic flour and egg dredge, the chicken is coated simply in thick Greek yoghurt, sea salt and black pepper, which helps the crumb stick while keeping the chicken tender and juicy. The crumb is super nutty, savoury and golden crunchy, then finished with sliced avocado, pickled onions and lemon to zest her up a but.
